Mini Egg Magic

If there was one thing in the world more incredibly delicious than Mini Eggs, it would have to be Chocolate Mini Egg Cookies! Happy Easter!




Ingredients
(try not to let these quantities bother you; after all, these are special occasion cookies, right?)
  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 tbsp. vanilla
  • 2 1/2 cups flour
  • 6 tbsp. unsweetened cocoa powder
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 10 oz. bag Mini Eggs
Method

  • Cream together butter and sugar. Add eggs and vanilla and combine well.
  • In a small mixing bowl, combine flour, cocoa, baking powder, and baking soda.
  • Mix the dry ingredients in to the wet ingredients until well combined.
  • Put the Mini Eggs in a large Ziploc bag, get out the rolling pin, and give 'em a good smack until they are broken down into halves and quarters. Save some full ones for the top to keep the cookies looking pretty.
  • Add the smashed Mini Eggs to the batter and mix.
  • Place spoonfuls of batter on to parchment lined baking sheets and bake at 350 degrees for about 10 minutes.
  • Cool and enjoy!
